Egg
Noodle produced by Bamboe Surabaya
Ingredients: Wheat flour, egg, salt, water, FD & C Yellow #5, Sodium carbonate as preservatives.

for Mie Goreng :

Cook
the noodles in boiling salted water for 4-5 minutes, or according to the
instructions on the package. Drain and rinse under cold running water for a
few seconds. Loosen and shake out the strands a little, then let cook and
dry.

In
a wok or frying pan heat the oil and fry the shallots
for 1 minute, then add the ginger
and coriander.
Stir for a few seconds, add the carrots and cabbage, and continue stirring
for about 4 minutes. Add the sweet
soy sauce and the noodles, and stir for 3 minutes. Add the tomatoes,
scallions, and salt and pepper. Turn and stir for another minute.

Clean
and prepare the scallops, squid, prawns,
and salted
fish. Fry each separately in the oil in a wok or frying pan for 2-3
minutes. Discard all but 2 tablespoons of the oil. Fry the shallots and
garlic in it, stirring continuously, for 2 minutes. Stir in the yellow bean
sauce and cayenne. Add the seafood, and stir-fry all together for not more
than 2 minutes. Arrange on top of the fried noodles. Serve immediately.
